Migrating to OpenTelemetry

Airplane has migrated its observability data generation and collection to the OpenTelemetry (OTel) standard. This migration allows the company to collect data more reliably, connect with different vendors more easily, and better monitor and control costs. OTel is a set of standards and tools for processing observability data, offering vendor-agnostic instrumentation, unifying different types of observability data, and providing solid library support for common programming languages. Airplane set up an OTel collector in each environment, configured via YAML files, to receive and export data to specific vendors. The migration has resulted in a more efficient and cost-effective observability stack for Airplane.
